Yummy Yogurt Pancakes with Berry Smiles
Fluffy and nutritious pancakes made with yogurt for extra goodness, topped with soft, sweet berries for a happy and healthy breakfast!
Ingredients
- 1/2 cup plain whole milk yogurt
- 1/4 cup milk (breast milk, formula, or whole cow’s milk)
- 1 large egg
- 3/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 cup blueberries or diced very soft fruit (such as ripe strawberries or peaches)
- 1-2 teaspoons oil or butter for cooking
Instructions
Gather all your ingredients: yogurt, milk, egg, whole wheat flour, baking powder, berries, and oil or butter.
In a medium-sized bowl, add the yogurt.
Pour in the milk (breast milk, formula, or cow’s milk) to the bowl with the yogurt.
Crack the egg into the bowl with the yogurt and milk.
Using a whisk, mix the yogurt, milk, and egg together until smooth. The mixture should be creamy.
Add the whole wheat flour and baking powder to the bowl.
Gently stir the ingredients together until just combined. It's okay if there are a few small lumps.
If the batter seems too thick, add one tablespoon more milk to thin it out.
Heat a skillet or griddle over medium heat. Add a little oil or butter to the pan.
Once the pan is hot, pour the batter to form small pancakes, about 3 inches in size.
If desired, gently press a few blueberries or diced soft fruit onto the top of each pancake before flipping. Alternatively, you can serve the fruit on the side.
Cook the pancakes until bubbles start to form on the surface and the bottom is golden brown, about 2 minutes.
Carefully flip the pancakes and cook for another 1–2 minutes, until the other side is golden brown and the pancake is cooked through.
Remove the cooked pancakes from the skillet and let them cool slightly.
Serve the pancakes with the remaining soft berries on top. Lightly mash the berries for younger toddlers to prevent choking.
