Berry-licious Baked Oatmeal Bites
Soft and easy-to-hold oatmeal cups packed with blueberries and banana, perfect for little hands and tummies. A nutritious breakfast or snack ready in minutes!
Ingredients
- 1 cup rolled oats (not instant)
- 1 cup whole milk (or breast milk/formula, or dairy-free alternative)
- 1 large egg (or 1/4 cup unsweetened applesauce for egg-free)
- 1/2 ripe banana, mashed
- 1/4 cup blueberries, fresh or frozen (chopped if large)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon melted butter or coconut oil (optional)
Instructions
Preheat your oven to 375°F (190°C).
Grease a mini muffin tin with cooking spray or use silicone mini muffin cups. This prevents the oatmeal bites from sticking.
In a medium-sized bowl, add the rolled oats.
Pour in the milk (or breast milk/formula/dairy-free alternative) to the bowl with the oats.
Add the egg (or applesauce if making egg-free) to the bowl.
Mash the ripe banana with a fork until smooth. Add the mashed banana to the oat mixture.
Sprinkle in the ground cinnamon and baking powder. Add the melted butter or coconut oil if using.
Stir all the ingredients together until well combined. The mixture will be wet; this is normal.
Gently fold in most of the blueberries, reserving a few for topping.
Spoon the oatmeal mixture into the prepared mini muffin cups, filling them to the top.
Press a blueberry onto the top of each oatmeal cup for a nice presentation.
Bake in the preheated oven for 20 minutes, or until the centers are set and the edges are lightly golden brown. They should still be moist.
Remove the muffin tin from the oven and let the oatmeal cups cool slightly before removing them from the tin.
Once cooled to a safe temperature, serve the oatmeal cups whole or broken into smaller pieces for easier eating.
Store leftover oatmeal cups in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 20 seconds or serve cold.
