Banana Bites Mini-Loaves
Soft and yummy mini banana bread loaves, perfect for little hands and made with whole wheat flour and no added sugar! Great for breakfast or snack.
Ingredients
- 2 very ripe bananas, mashed
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon (optional)
- 1/4 cup milk (or almond milk)
- 3 tablespoons unsalted butter, melted (or coconut oil)
Instructions
Preheat oven to 350°F (175°C).
Grease a mini loaf pan (or muffin tin) very well to prevent sticking. You can also use parchment paper liners.
In a large bowl, crack and beat the 2 large eggs until slightly frothy.
Add the mashed bananas, unsweetened applesauce, melted butter (or coconut oil), and vanilla extract to the bowl with the eggs.
Mix all wet ingredients together until well combined. It's okay if there are still some small lumps of banana.
In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, and cinnamon (if using).
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
If the batter seems too thick, add a tablespoon or two of milk (or almond milk) until it reaches a thick, pourable consistency.
Pour the batter evenly into the prepared mini loaf pan or muffin tin, filling each about 2/3 full.
Bake for 25-30 minutes for mini loaves (or 18-20 minutes for muffins), or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Let the mini loaves cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Once cooled, slice into small, easy-to-handle pieces for your toddler.
Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
