Apple-licious Turkey Bites
These mini turkey meatballs are made with grated apple for a touch of sweetness and extra moisture, making them a delicious and nutritious finger food for little ones.
Ingredients
- 4 oz ground turkey (dark meat or mix)
- 2 tablespoons finely grated apple (peeled, sweet variety like Gala or Fuji)
- 1 tablespoon fine bread crumbs or oat flour
- 1/2 egg yolk (optional, for binding)
- 1/8 tsp poultry seasoning or pinch of sage (optional)
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Peel and finely grate the apple using a grater or food processor. Ensure it's finely grated to avoid large chunks.
In a medium bowl, combine the ground turkey, grated apple, and bread crumbs or oat flour.
If the mixture seems too loose and doesn't hold its shape well, add the egg yolk. If it seems firm enough without, you can omit the egg yolk.
If using, add a pinch of poultry seasoning or sage to the mixture for added flavor. Mix gently to combine all ingredients.
Using your hands, gently form the mixture into small meatballs, about 1 inch in diameter. The mixture will be softer than regular meatball mixture due to the apple. If it feels too wet add a tiny amount of oat flour.
Place the formed meatballs onto the prepared baking sheet, leaving a little space between each one.
Bake in the preheated oven for approximately 15 minutes, turning the meatballs once halfway through.
Ensure the meatballs are fully cooked through. They should be lightly golden brown and firm to the touch. An internal temperature of 165°F (74°C) should be reached.
Alternatively, you can simmer the meatballs in a small amount of water or broth in a saucepan for about 10 minutes, until cooked through.
Remove the meatballs from the oven (or saucepan) and let them cool slightly before serving. Cooling them allows them to firm up.
For younger babies, cut the meatballs in half or into smaller pieces if needed to prevent choking.
Serve the Apple-licious Turkey Bites as a finger food or alongside mashed sweet potato or cooked pasta.
Store leftover meatballs in an airtight container in the refrigerator for up to 2 days, or freeze for longer storage.
