ABC Mini Muffins: Apple, Banana, Carrot Bites!
Soft and sweet mini muffins packed with fruits and veggies! These are perfect for little hands and tummies, providing a healthy and delicious snack or breakfast.
Ingredients
- 1 small apple, peeled and finely shredded (about 1/3 cup)
- 1 small carrot, peeled and finely shredded (about 1/3 cup)
- 1 ripe banana, mashed
- 1 large egg (or 1 flax egg: 1 tbsp ground flax + 3 tbsp water)
- 1/2 cup whole wheat flour (or 1/4 cup almond flour and 1/4 cup oat flour)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 tablespoons melted butter or oil
- 1 teaspoon vanilla extract (optional)
Instructions
Preheat oven to 350°F (175°C).
Grease a mini muffin tin with butter or cooking spray to prevent sticking.
Peel the apple and carrot. Finely shred them using a grater. Squeeze out any excess moisture from the shredded apple.
In a mixing bowl, mash the ripe banana with a fork until smooth.
Add the shredded apple and carrot to the bowl with the mashed banana.
Crack the egg into the bowl (or prepare flax egg by mixing 1 tbsp ground flax with 3 tbsp water and letting it sit for a few minutes to thicken).
Pour in the melted butter or oil and add the vanilla extract (if using).
Mix all the wet ingredients together until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
Bake for 15 minutes, or until the muffins are set and a toothpick inserted into the center comes out mostly clean.
Remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes.
Transfer the muffins to a wire rack to cool completely before serving. Break into small, manageable pieces for toddlers.
Store leftover muffins in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
