Lamby Potato Stew
A comforting and nutritious stew with tender lamb, soft potatoes, and sweet carrots, perfect for introducing savory flavors to your little one.
Ingredients
- 2 oz boneless lamb (leg chop or shoulder), cut into 1/4-inch cubes
- 1 small potato, peeled and diced into 1/4-inch pieces
- 1/2 small carrot, peeled and diced into 1/4-inch pieces
- 1 cup water or unsalted vegetable broth
- 1/2 tsp olive oil
- Pinch of dried rosemary, finely minced (optional)
Instructions
Gather all ingredients: Ensure lamb is cut into small, manageable cubes, and potato and carrot are diced evenly.
Heat olive oil: In a small saucepan, heat olive oil over medium heat.
Brown the lamb: Add lamb cubes to the saucepan. Sauté for 2-3 minutes, turning occasionally, until lightly browned on all sides. This step enhances the flavor.
Add vegetables: Add the diced potato and carrot to the saucepan with the lamb.
Add rosemary (optional): If using, sprinkle the minced rosemary over the lamb and vegetables.
Add liquid: Pour in the water or unsalted vegetable broth. Ensure the liquid covers the lamb and vegetables.
Bring to a boil: Increase the heat and bring the mixture to a gentle boil.
Reduce heat and simmer: Reduce the heat to low, cover the saucepan with a lid, and simmer for 30 minutes, stirring occasionally. Ensure the liquid doesn't evaporate completely; add more if needed.
Check for tenderness: After 30 minutes, check the lamb and vegetables for tenderness. The lamb should be very soft and easily mashed with a spoon, and the potato and carrot should be soft.
Adjust the texture (optional): For younger babies or those who prefer smoother textures, lightly mash the stew with a fork or potato masher to create a chunky puree. Alternatively, finely shred the lamb.
Cool slightly: Remove the saucepan from the heat and let the stew cool slightly before serving.
Check temperature: Ensure the stew is lukewarm before serving to your baby.
Serve: Spoon a portion of the Lamby Potato Stew into a bowl and serve immediately. Refrigerate any leftovers in an airtight container for up to 24 hours.
