Cheesy Cottage Cheese Pancake Bites
Soft and fluffy pancake bites packed with protein from cottage cheese, perfect for little hands and growing bodies.
Ingredients
- 1/2 cup full-fat cottage cheese
- 1 large egg
- 2 tablespoons milk (any type)
- 1/4 cup whole wheat flour (or oat flour for gluten-free)
- 1/4 teaspoon baking powder
- 1/2 teaspoon vanilla extract (optional)
- 1 teaspoon oil or butter for cooking
Instructions
Gather all ingredients: cottage cheese, egg, milk, flour, baking powder, vanilla extract (if using), and oil or butter.
In a medium mixing bowl, add the cottage cheese. Use a fork or whisk to mash the cottage cheese, breaking down the larger curds. It's okay if some small lumps remain.
Crack the egg into the bowl with the cottage cheese.
Pour the milk into the bowl with the cottage cheese and egg.
Add the vanilla extract (if using) to the mixture.
Whisk all wet ingredients (cottage cheese, egg, milk, and vanilla) together until well combined.
Add the flour and baking powder to the wet ingredients.
Gently stir the flour and baking powder into the wet ingredients until just combined. Avoid overmixing; a few lumps are fine.
Heat a non-stick skillet or griddle over medium heat. Add the oil or butter to the skillet and let it melt and coat the surface.
Once the skillet is hot, spoon 1-2 tablespoons of batter onto the skillet for each pancake bite. Space them evenly apart.
Cook the pancake bites for 2-3 minutes, or until the bottoms are golden brown and small bubbles start to appear on the surface.
Carefully flip the pancake bites with a spatula and cook for another 1-2 minutes, or until cooked through and golden brown on both sides.
Remove the cooked pancake bites from the skillet and place them on a plate to cool slightly before serving.
Cut the pancakes into smaller pieces if needed, depending on your child's chewing ability.
Serve the cottage cheese pancake bites plain or with a side of fruit puree or unsweetened applesauce for dipping.
