Banana Oat Mini Pancakes: Perfect for Little Hands!

Ingredients
- 1 ripe banana, mashed
- 1 large egg
- 3 tablespoons milk (breast milk, formula, or whole cow’s milk)
- 1/4 cup rolled oats (blended for smoother texture, optional)
- 1/4 teaspoon cinnamon (optional)
- 1 teaspoon oil or unsalted butter for cooking
Instructions
Gather all your ingredients: mashed banana, egg, milk, oats, cinnamon (if using), and oil/butter.
In a medium-sized bowl, mash the ripe banana with a fork until it's smooth with only a few small lumps.
Crack the egg into the bowl with the mashed banana.
Pour the milk into the bowl with the banana and egg.
Whisk the banana, egg, and milk together until well combined. The mixture should be mostly smooth.
Add the rolled oats to the wet ingredients.
If using cinnamon, sprinkle it into the bowl. Stir everything together gently. Let the mixture sit for 1 minute to soften the oats.
Heat a non-stick pan or griddle over medium heat. Add the oil or butter to the pan and let it melt.
Once the pan is hot, pour small spoonfuls (about 1 tablespoon each) of batter onto the pan to form mini pancakes.
Cook for approximately 2 minutes, or until you see small bubbles forming on the surface of the pancakes and the bottoms are golden brown.
Gently flip each pancake with a spatula.
Cook for another 1-2 minutes on the other side, or until the pancakes are cooked through and golden brown.
Remove the pancakes from the pan and place them on a plate to cool slightly.
Let the pancakes cool completely before serving. Cut into bite-sized pieces if needed, especially for younger toddlers.
Serve the banana oat pancakes plain. No syrup needed!
