Sweet Potato & Chicken Mini-Meatballs
Soft and flavorful mini-meatballs perfect for little hands, packed with sweet potato and chicken for a nutritious and delicious meal.
Ingredients
- 1 small sweet potato (about 4 ounces), peeled and cubed
- 1/2 pound ground chicken
- 1/4 cup cooked and finely chopped broccoli florets
- 1/4 cup breadcrumbs (plain, unsalted)
- 1 tablespoon olive oil
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 tablespoon water
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Steam or boil the cubed sweet potato until very tender, about 10-12 minutes. Drain well and mash thoroughly with a fork or potato masher.
In a large bowl, combine the mashed sweet potato, ground chicken, finely chopped broccoli, breadcrumbs, olive oil, cinnamon, and ginger.
Add 1 tablespoon of water to the mixture to help bind the ingredients. Mix well with your hands until everything is evenly combined.
Using your hands, roll the mixture into small, bite-sized meatballs, about 1 inch in diameter. Place the meatballs on the prepared baking sheet.
Bake in the preheated oven for 18-20 minutes, or until the meatballs are cooked through and lightly browned.
Ensure the internal temperature of the chicken meatballs reaches 165°F (74°C) before serving.
Remove the meatballs from the oven and let them cool slightly before serving to your little one.
Before serving, check that the meatballs are soft enough for your child to manage. If needed, you can gently flatten them further with a fork.
Serve the mini-meatballs as part of a balanced meal with other soft-cooked vegetables or fruits.
Refrigerate leftovers in an airtight container for up to 2 days.
