Rainbow Veggie Omelet Bites

Ingredients
- 1 large egg
- 2 tablespoons milk (or dairy-free alternative)
- 2 tablespoons very finely chopped red bell pepper
- 2 tablespoons very finely chopped tomato (seeds removed)

- 1 tablespoon shredded cheddar cheese (optional, or dairy-free alternative)
- 1 teaspoon olive oil or butter
Instructions
Gather all ingredients: egg, milk, red bell pepper, tomato, onion (if using), cheese (if using), olive oil or butter.
Prepare the vegetables: Wash and finely dice the red bell pepper, tomato (remove seeds), and onion (if using). The smaller the pieces, the easier for your toddler to eat.
In a small bowl, crack the egg and whisk it well with the milk (or dairy-free alternative) until light and frothy.
Add the finely chopped red bell pepper, tomato, and onion (if using) to the egg mixture. Stir gently to combine.
Heat the olive oil or butter in a small, non-stick skillet over medium heat. Ensure the pan is hot but not smoking.
Pour the egg and vegetable mixture into the heated skillet. Tilt the pan to spread the mixture evenly across the bottom.
Cook the omelet for about 1-2 minutes, or until the bottom is set and the top is mostly set but still slightly moist.
If using cheese, sprinkle the shredded cheese evenly over one half of the omelet.
