Egg & Veggie Bites (Mini Frittatas)
These mini egg muffins are packed with veggies and protein, perfect for breakfast or a snack. They're baked in a muffin tin, making them easy to grab and go!
Ingredients
- 2 large eggs
- 2 tablespoons milk (whole milk or alternative)
- 1/4 cup very finely chopped broccoli florets (steamed or microwaved until just tender)
- 1 small carrot, finely grated (about 2 tablespoons)
- 2 tablespoons shredded cheddar cheese (or crumbled feta)
- 1 tablespoon finely chopped fresh parsley or chives (optional)
Instructions
Preheat your oven to 350°F (180°C).
Lightly grease a mini muffin tin with cooking spray or butter. Alternatively, use silicone muffin cups.
Finely chop the broccoli florets. Ensure they are cooked until tender for easy chewing.
Grate the carrot finely using a grater.
In a bowl, crack the two eggs.
Add the milk to the bowl with the eggs.
Whisk the eggs and milk together until well combined and slightly frothy.
Add the finely chopped broccoli, grated carrot, shredded cheese, and herbs (if using) to the egg mixture.
Gently stir all the ingredients together until everything is evenly distributed.
Carefully pour the egg mixture into the prepared mini muffin cups, filling each about 3/4 full. Use a small spoon or measuring cup for easy pouring.
Place the muffin tin in the preheated oven.
Bake for 15 minutes, or until the egg muffins are set and lightly golden on top. A toothpick inserted into the center should come out clean.
Remove the muffin tin from the oven and let the muffins cool for a few minutes.
Gently remove the mini frittatas from the muffin tin.
Serve warm. Cut each mini muffin into halves or quarters for easier eating, depending on your toddler’s ability.
