Lamb & Potato Yummy Stew
A hearty and flavorful stew with tender lamb, soft potatoes, and sweet carrots, perfect for introducing little ones to new tastes and textures.
Ingredients
- 2 oz boneless lamb (leg or shoulder), cut into 1/2-inch cubes
- 1 small potato, peeled and diced
- 1/2 small carrot, peeled and diced
- 1 cup water or unsalted low-sodium chicken broth
- 1/2 tsp olive oil
- Pinch of dried rosemary, finely ground (optional)
Instructions
Gather all ingredients and have them prepped: lamb cubed, potato diced, carrot diced, rosemary measured.
Heat olive oil in a small saucepan over medium heat.
Add lamb cubes to the saucepan and cook for 2-3 minutes, turning occasionally, until lightly browned on all sides. The lamb does not need to be cooked through at this stage.
Add the diced potato and carrot to the saucepan with the lamb.
Pour in the water or unsalted broth, ensuring the vegetables and lamb are mostly submerged.
Add the pinch of dried rosemary (if using).
Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and simmer for 30 minutes, or until the lamb is very tender and easily mashed with a spoon, and the potatoes and carrots are soft.
Check the liquid level occasionally during cooking. If it gets too low, add a little more water or broth to prevent sticking.
Once the stew is cooked, remove it from the heat and let it cool slightly.
Carefully check the stew for any small bones or gristle before serving, especially if the lamb was cut from a bone-in piece.
Adjust the texture as needed for your baby's age and ability. You can mash the stew with a fork for a chunkier texture, or use an immersion blender for a smoother puree.
Alternatively, shred the lamb into very small pieces and leave the vegetables in small, soft chunks if your baby is comfortable with that texture.
Allow the stew to cool to a safe temperature before serving.
Serve a small portion to your baby. Lamb can be rich, so a little goes a long way. You can mix in a spoonful of plain yogurt for added creaminess and to help with iron absorption.
