Green Monster Pancakes
These bright green pancakes are a fun and nutritious way to sneak some spinach into your little one's breakfast! They're soft, sweet, and perfect for little hands.
Ingredients
- 1 ripe banana
- 1 large egg
- 1/4 cup milk (breast milk, formula, or whole milk)
- 1 cup fresh baby spinach leaves (packed)
- 1/4 cup whole wheat flour (or oat flour)
- 1/4 teaspoon baking powder
- 1/4 teaspoon pure vanilla extract (optional)
- 1-2 teaspoons oil or butter, for cooking
Instructions
Gather all ingredients: banana, egg, milk, spinach, whole wheat flour, baking powder, vanilla extract (if using), and oil or butter.
Peel the ripe banana and break it into smaller pieces.
Place the banana pieces into a blender.
Add the egg and milk to the blender.
Add the fresh baby spinach leaves to the blender.
Blend all the ingredients together until completely smooth and a vibrant green color. Make sure there are no visible spinach pieces.
Add the whole wheat flour and baking powder to the blender.
Add the vanilla extract, if desired.
Blend again briefly, just until the flour and baking powder are fully incorporated. Do not over-blend.
Heat a lightly greased pan or griddle over medium heat. Use oil or butter to grease the pan.
Pour small circles of batter (about 2-3 inches wide) onto the hot pan. Use a spoon or small measuring cup to portion the batter.
Cook the pancakes until bubbles form on the surface and the edges look set (about 2 minutes).
Flip the pancakes carefully and cook for another 1-2 minutes, or until they are cooked through and lightly golden brown.
Remove the cooked pancakes from the pan and let them cool slightly.
Cut the pancakes into toddler-hand-sized pieces or smaller, depending on your child's preference and chewing ability. Serve warm.
