Cheesy Tomato Scramble for Little Ones
Soft and fluffy scrambled eggs with sweet tomato pieces and melted cheese, perfect for introducing new flavors and textures to your little one.
Ingredients
- 1 large egg
- 1 tablespoon milk or formula (optional)
- 1 cherry tomato
- 1 tablespoon shredded mild cheddar or mozzarella cheese
- 1/2 teaspoon butter or olive oil
- Optional: 1 tablespoon finely chopped spinach or red bell pepper
Instructions
Wash the cherry tomato thoroughly.
If using tomato, you can remove the skin by quickly blanching it in boiling water for 10 seconds, then transferring it to an ice bath. The skin should peel off easily. Alternatively, cut the tomato in half and scoop out the seeds before dicing.
Finely dice the tomato flesh into very small pieces. If using spinach or red bell pepper, finely chop them as well. If using bell pepper, saute for 2 mins to soften. If using spinach, microwave for 30 sec to wilt.
In a small bowl, crack the egg and whisk it well with the milk or formula (if using) until light and frothy.
Heat the butter or olive oil in a small non-stick skillet over medium-low heat.
Add the diced tomato (and optional spinach/pepper) to the skillet and sauté for about 30 seconds, until slightly softened.
Pour the whisked egg into the skillet over the sautéed tomato.
Using a spatula, gently stir and scramble the egg continuously, bringing the cooked curds together.
When the egg is about halfway set (still slightly wet), sprinkle the shredded cheese evenly over the eggs.
Continue to gently stir and scramble until the eggs are softly cooked and no longer liquid, but still moist. Avoid browning the eggs.
Remove the skillet from the heat immediately, as the eggs will continue to cook from the residual heat.
Let the scrambled eggs cool slightly to a warm temperature before serving.
Serve the cheesy tomato scramble in small spoonfuls to your little one, or place small portions on their tray for self-feeding.
Discard any uneaten portion after one hour to prevent bacterial growth.
