Sunshine Sweet Potato Smiles
A simple, creamy, and naturally sweet purée made with vitamin-rich sweet potatoes, perfect as a first food for babies. This recipe is packed with Vitamin A and fiber for a healthy start.
Ingredients
- 1 medium sweet potato (about 6 ounces), peeled and cubed
- 2-4 tablespoons water, breast milk, or formula (for thinning)
Instructions
Step 1: Wash the sweet potato thoroughly under cool running water.
Step 2: Peel the sweet potato using a vegetable peeler. Ensure all the skin is removed.
Step 3: Place the peeled sweet potato on a cutting board.
Step 4: Using a sharp knife, carefully cut the sweet potato into small, even cubes (approximately 1/2 inch). This helps it cook evenly and quickly.
Step 5: Place the cubed sweet potato into a steamer basket.
Step 6: Fill a saucepan with about 1 inch of water and bring to a boil.
Step 7: Place the steamer basket with the sweet potato cubes over the boiling water. Make sure the water does not touch the sweet potatoes.
Step 8: Cover the saucepan with a lid and steam for 10-15 minutes, or until the sweet potato cubes are very tender and easily pierced with a fork.
Step 9: Remove the steamer basket from the saucepan and let the sweet potato cool slightly.
Step 10: Transfer the cooked sweet potato cubes to a blender or food processor.
Step 11: Add 2 tablespoons of water, breast milk, or formula to the blender. Blend until smooth.
Step 12: If the purée is too thick, add more liquid (1 tablespoon at a time) until you reach a desired smooth, spoonable consistency.
Step 13: Transfer the purée to a clean bowl.
Step 14: Allow the purée to cool completely before serving to your baby.
Step 15: Store any leftover purée in an airtight container in the refrigerator for up to 2 days or freeze in ice cube trays for longer storage.
